My monitor is super crappy. It's a monocrome 640x480 monitor. After the KnoppMyth installation it tries to go into 1024x768 mode and my monitor freaks out. Is there a way to tell Knopp to use a lower resolution during the initial installation?

Preferably I'd like it not to load X at all so I can go in as root and change the XFConfig-4 to use my PVR-350.

I THINK - but I'm a newbie and someone more experienced should post here and confirm/deny - that you can hit Ctr-Alt-F1 and you can go from there to changing the XF86Config-4 file that I just rediscovered from my post earlier today (look there for the file location). In there you can edit the monitor settings.
