I'm kind of new to this PVR business so I am reading up on all I can.

What is the proper hardware setup to record a show and watch a different show at the same time?

Can you use a Hauppage 500 card to do this since it has two tuners?

Yes, exactly. You need two tuners, one for recording and one for watching. Since the PVR 500 has two tuners on one card, that would do the trick.
