Anyone out there running a MythTV box w/ two HDs? I have two 80s I wouldn't mind using both. I have the bulk of one 80 going to /myth right now. Can I just mount the other to /myth2 and add that to the config or is there a smarter way?

I'd suggest reading the LVM howto to combine the drivers into "one".
