I've bought a new gigabit NIC for my mythtv machine :D

Currently my system has an onboard 10/100 NIC. What is the best way to use the new one?

Should I disable the onboard one in the bios, add the new one and boot up? (I will add the new MAC address to my dhcp server so it gets the same IP as the old one)

Yes, disable the old. I assume you know the new one is supported with Linux and the needed kernel module is included. The new NIC in that case should be found and running netcardconfig should just work.

For some reason it wasnt getting an IP address on each boot, an lsmod showed the module was loaded but i had to do netcardconfig each time. Fixed it by adding the module to /etc/modules where the old one network card module was :)
