In general, how hard is it to add hard drive space to an already-configured mythbox?

With R5.5:

1) Physically add the drive to the system (install, connect power and data cables)

2) Format the drive (cfdisk and the appropriate mkfs version see the wiki for details)

3) Add the mount point(s) for the new partition(s) in /etc/fstab

4) Add a new storage group which points to the mounted drive.

This should all take under an hour. Maybe 30 minutes if you're a good hardware tech.
